I ran across this when searching for a belgian stout recipe. It looks like it's been about a year...so have you tried it yet? I'd love to know how it turned out.

Dude, sounds great. I don' think I would want to go to your parents' anniversary, but I definitely want to try this beer!
Reading your post made me think of something, that I completely forgot to mention last we talked about free floating hops and separating the wort or beer from them. I found a drain filter or lint trap of some kind at the hardware store, some time ago. Forgive me for the description, but it basically looks like some sort of chain-male condom. This can be zip-tied over the business end of a racking cane (ha couldn't resist). The mesh is wide enough to allow wort / beer to be siphoned out, without allowing the hop leaves to get into and clog the cane. This little sieve is very inexpensive and might be adapted to your brewpot fairly easily.
